Designing Estiatorio Milos Toronto required uniting three structurally distinct spaces into one cohesive restaurant reflecting Milos’s light-filled simplicity and timeless elegance. JBI exposed a long, double-height volume, turning existing beams into sculptural elements with uplighting above a 65-foot marble bar. Beneath a central skylight, historic limestone arches were embraced as found architecture while upward-angled wood louvers screened an office façade, creating a sunlit courtyard by day and lantern-lit plaza by night. A narrow third space became a private dining suite with a barrel-vaulted ceiling and oak-and-brass detailing. From entry to market, Milos Toronto merges history, craftsmanship, and warm Greek hospitality.
